- Combine Ingredients: In a large mixing bowl, combine the heavy cream, granulated sugar, apple cider (or apple juice or lemon juice), the juice and zest from one large lemon, and vanilla extract.
- Whip to Stiff Peaks: Using an electric mixer (or a whisk and a lot of elbow grease!), whip the mixture until it is thickened and holds stiff peaks. Be careful not to over-whip, which can turn it grainy.
- Chill: Cover the bowl with plastic wrap and chill in the refrigerator for a minimum of 1 hour. This allows the flavors to meld and the syllabub to firm up.
- Serve: After it has been properly chilled, portion out the Lemon Syllabub into individual serving dishes, glasses, or small bowls.
