Ingredients:

Ingredient Quantity
Heavy cream 1 1/2 cups
Granulated sugar 1/4 cup
Apple cider, apple juice, or lemon juice 2 tablespoons
Large lemon, zested and juiced 1
Vanilla extract 1/2 teaspoon

Instructions:

  1. Combine Ingredients: In a large mixing bowl, combine the heavy cream, granulated sugar, apple cider (or apple juice or lemon juice), the juice and zest from one large lemon, and vanilla extract.
  2. Whip to Stiff Peaks: Using an electric mixer (or a whisk and a lot of elbow grease!), whip the mixture until it is thickened and holds stiff peaks. Be careful not to over-whip, which can turn it grainy.
  3. Chill: Cover the bowl with plastic wrap and chill in the refrigerator for a minimum of 1 hour. This allows the flavors to meld and the syllabub to firm up.
  4. Serve: After it has been properly chilled, portion out the Lemon Syllabub into individual serving dishes, glasses, or small bowls.
