Ingredients:

Frozen peas, thawed 2 (12 oz) bags
Aged Irish cheese, shredded or diced 1 ½ cups

Dressing:

Mayo 3/4 cup
Sweet relish 1/2 cup
Spicy mustard 1 tablespoon
Dried thyme 1 teaspoon
Salt 2 teaspoons

Instructions:

  1. Prepare the Dressing: In a small bowl, combine all the dressing ingredients: 3/4 cup mayo, 1/2 cup sweet relish, 1 tablespoon spicy mustard, and 1 teaspoon dried thyme. Mix thoroughly with a whisk or fork until the dressing is smooth and well combined. Set aside.
  2. Layer the Salad: Choose a large, clear glass bowl or trifle dish to showcase the beautiful layers. Carefully layer the ingredients in the following order:
    • First, spread the chopped iceberg lettuce evenly at the bottom.
    • Next, add a layer of finely chopped red onion.
