Instructions:
Preheat the Oven:
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Prepare the Cobbler Batter:
- In a large bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, nutmeg, and cloves until well combined.
- In a separate bowl, mix together the pumpkin puree, milk, melted butter or oil, and vanilla until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
Spread the Batter:
- Spread the cobbler batter evenly into the prepared baking dish, smoothing the top with a spatula.
Make the Topping:
- In a small bowl, mix together the granulated sugar, brown sugar, and chopped pecans.
- Sprinkle the topping mixture evenly over the cobbler batter in the baking dish.
Add Hot Water:
- Carefully pour the very hot water over the top of the cobbler batter and topping. Do not stir.
Bake and Serve:
- Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the cobbler is golden brown and bubbly.
- Remove from the oven and let cool slightly before serving.
