Jimmy Carter Cake is a layered dessert that’s a peanut butter and chocolate lover’s dream. It features a crunchy peanut and graham cracker crust, a creamy peanut butter layer, a rich chocolate pudding layer, and a light whipped topping, all topped with chocolate chips and extra peanuts.

Ingredients:

Dry-roasted peanuts 1 cup
Graham cracker crumbs 3 cups
Granulated sugar 1/4 cup
Butter, melted 6 tablespoons
Creamy peanut butter 2/3 cup
Brown sugar, packed 1/3 cup
Vanilla extract 1 1/2 teaspoons
Cream cheese, room temperature 1 (8 oz) block
Frozen whipped topping, divided 16 oz
Instant chocolate pudding mix 1 (5.1 oz) package
Whole milk 3 cups
Mini chocolate chips 1/2 cup
Additional peanuts For decorating

Instructions:

  1. Preheat Oven: Preheat oven to 350°F (175°C).
  2. Prepare the Crust:
    • Add dry-roasted peanuts to a food processor and pulse until roughly chopped.
    • Add graham cracker crumbs, granulated sugar, and melted butter to the food processor and pulse until evenly combined.
    • Transfer crust mixture into a 9×13-inch baking dish and press into a thin, even layer to form a crust.
    • Bake for 8-10 minutes or until lightly golden.
    • Allow the crust to cool completely.
  3. Prepare the Peanut Butter Layer:
    • In a large bowl, add creamy peanut butter, brown sugar, vanilla extract, and cream cheese.
    • Mix for about 1 minute, or until smooth.
    • Gently fold in half of the whipped topping until just combined.
    • Spread the peanut butter mixture evenly over the cooled crust.
  4. Prepare the Chocolate Layer:
    • In a large bowl, add instant chocolate pudding mix and whole milk.
    • Mix until the pudding begins to thicken, about 1-2 minutes.
    • Gently spread the chocolate pudding mixture evenly over the peanut butter layer.
  5. Add Whipped Topping and Garnish:
    • Spread the remaining whipped topping evenly over the chocolate pudding layer.
    • Garnish with mini chocolate chips and additional peanuts.
  6. Chill:
    • Tightly cover the baking dish and place it in the refrigerator for at least 2 hours, or until fully set.
  7. Serve: Cut into squares and serve. Enjoy!
