Ingredients:

Crumbled bacon | 4 pieces |
Skinless, boneless chicken breasts | 1/2 lb, diced |
Russet potatoes | 4 large, cut into cubes |
Onion | 1 medium, chopped finely |
Cheddar cheese, shredded | 1 cup |
Chicken broth | 1 cup |
Garlic powder | 1 teaspoon |
Paprika | 1 teaspoon |
Salt and pepper | To taste |
Sour cream | 1/2 cup |
Chopped fresh chives (optional) | 1/4 cup |
Instructions:
- In your slow cooker, layer half of the chicken, onions, and potatoes.
- Sprinkle with half of the crumbled bacon, garlic powder, paprika, salt, and pepper.
- Repeat the layers with the remaining chicken, onions, potatoes, and spices.
- Pour the chicken broth evenly over the ingredients.
- Cover and cook on low for 6-8 hours, or until the chicken and potatoes are cooked through.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese on top.
- Recover and cook for an additional 30 minutes, or until the cheese is melted and bubbly.
- Before serving, stir in the sour cream and garnish with chopped chives, if desired.
