Island Pecan Pie

This recipe blends the classic flavors of pecan pie with tropical touches of pineapple and coconut for a truly unique dessert.

Ingredients:

Pie Crust (homemade or store-bought) 1
Sugar 1 3/4 cups
Pecans, roughly chopped 1 cup
Crushed Pineapple, drained 1 cup
Shredded Coconut 1 cup
Unsalted Butter, melted 1/2 cup (1 stick)
Eggs, room temperature 5
Cornstarch 1 tablespoon
All-purpose Flour 1 tablespoon
Salt 1/4 teaspoon

Instructions:

  1. Preheat oven: Set your oven to 300°F (150°C).
  2. Combine wet ingredients: In a large bowl, whisk together the sugar, eggs, cornstarch, flour, and salt until smooth and well combined.
  3. Add butter and mix: Stir in the melted butter until fully incorporated.
  4. Fold in dry ingredients: Gently fold in the chopped pecans, drained pineapple, and shredded coconut.
  5. Prepare pie crust: Place the pie crust in a pie dish.
  6. Pour filling: Pour the pecan mixture evenly over the prepared crust.
  7. Crimp edges: Crimp the edges of the pie crust to seal.
  8. Bake: Place the pie in the preheated oven and bake for 55 minutes.
  9. Cover and continue baking: After 55 minutes, loosely cover the pie with aluminum foil. Continue baking for an additional 15-20 minutes, or until the center of the pie is just set.
  10. Cool and serve: Remove the pie from the oven and let it cool slightly before serving. Garnish with whipped cream and toasted coconut flakes (optional).
