  • Combine all-purpose flour and salt in a large mixing bowl.
  • Add oil and incorporate it into the flour until the mixture resembles coarse breadcrumbs.
  • Gradually add water, kneading it into a stiff dough.
  • Cover the dough and let it rest for at least 30 minutes.

2. Prepare the Filling

  • Heat oil in a pan over medium heat.
  • Sauté onions until translucent, then add peas, mashed potatoes, garam masala, cumin, coriander, chili powder, and salt.
  • Cook for 5-7 minutes, then remove from heat.
  • Mix in lemon juice and chopped cilantro, allowing the filling to cool.

3. Assemble the Samosas

  • Divide the dough into equal portions and roll each into a ball.
  • Roll out each ball into a circle and cut it in half.
  • Take one half and form it into a cone shape, sealing the edge with water.
  • Fill the cone with the prepared potato mixture and seal the open edges securely.

4. Fry the Samosas

  • Heat oil in a deep frying pan over medium heat.
  • Fry the assembled samosas in batches until they turn golden brown and crispy.
  • Once fried, drain the samosas on paper towels to remove excess oil.
