This simple and flavorful Herb & Cheese Quick Bread is a delightful addition to any meal. It’s easy to make, requires no yeast, and is packed with fresh herbs and parmesan cheese. Perfect for breakfast, a side dish, or a tasty snack.

Ingredients:

Flour 3 cups
Baking soda 1 teaspoon
Baking powder 1 tablespoon
Granulated sugar 1 tablespoon
Salt 1 1/2 teaspoons
Buttermilk 2 cups
Large egg 1
Garlic, minced 3 cloves
Olive oil ⅓ cup
Fresh oregano, chopped 1 tablespoon
Fresh chives, chopped 1 tablespoon
Fresh thyme, chopped 1 tablespoon
Fresh rosemary, chopped 1 tablespoon
Olive oil (for top) 1 tablespoon
Shredded parmesan cheese ¼ cup

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350 degrees F (175 degrees C). Thoroughly grease a 9×5-inch bread pan.
  2. Combine Dry Ingredients: In a large bowl, sift together the flour, baking soda, baking powder, sugar, and salt.
  3. Combine Wet Ingredients: In a separate large bowl, combine the buttermilk, egg, and minced garlic. Whisk until smooth.
  4. Mix Wet and Dry: Slowly pour the wet ingredients into the dry ingredients, mixing until just combined. Avoid overmixing.
  5. Add Oil and Herbs: Add the ⅓ cup of olive oil and the chopped fresh oregano, chives, thyme, and rosemary. Stir until the herbs are evenly distributed throughout the batter.
  6. Pour and Top: Transfer the batter to the prepared bread pan. Drizzle the remaining 1 tablespoon of olive oil over the top of the batter. Sprinkle the shredded parmesan cheese evenly over the top.
  7. Bake: Bake in the preheated oven for 42-45 minutes, or until the bread is set in the middle and the top is golden brown. A toothpick inserted into the center should come out clean.
  8. Cool and Slice: Allow the bread to cool in the pan for 25 minutes before slicing and serving.
