This Mexican Taco Lasagna is a fun twist on a classic! Layers of ground beef, beans, corn, and cheese are sandwiched between tortillas and baked to perfection. It’s a hearty and flavorful dish that’s perfect for a weeknight dinner or a casual gathering.

Ingredients:

Ground Beef Mixture:

Ground beef 1 pound
Onion, finely chopped 1
Garlic, minced 2 cloves
Taco seasoning mix 1 packet
Black beans, drained and rinsed 1 can (15 ounces)
Corn kernels (fresh or frozen) 1 cup
Salsa 1 cup

Small flour tortillas 8
Shredded Mexican blend cheese 2 cups
Diced green chilies, drained (optional) 1 can (4 ounces)

Instructions:

  1. Prepare the Ground Beef Mixture:

    • Cook ground beef in a large skillet over medium heat until browned.
    • Add onion and garlic, cook until softened.
    • Stir in taco seasoning mix, black beans, corn, and salsa. Simmer until heated through.
  2. Assemble the Lasagna:

    • Preheat oven to 375°F (190°C).
    • In a baking dish, layer 4 tortillas.
    • Top with half of the ground beef mixture and half of the cheese.
    • Repeat with remaining tortillas, ground beef mixture, and cheese.
    • Optionally, sprinkle diced green chilies over the top layer of cheese.
  3. Bake:

    • Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  4. Serve:

    • Let cool slightly before serving.
    • Garnish with cilantro, tomatoes, green onions, sour cream, and jalapeños.
