This simple yet satisfying casserole combines the savory flavors of ground beef and onions with the subtle sweetness of cabbage and the comforting addition of rice, all topped with melted cheddar cheese. It’s a perfect dish for a cozy weeknight meal.

Ingredients:

Ingredient Quantity
Ground Beef 1 pound
Medium Onion (chopped) 1
Cabbage (chopped) 3 cups
Diced Tomatoes (undrained) 1 can (14.5 ounces)
Cooked Rice 1 cup
Garlic Powder 1 teaspoon
Salt 1 teaspoon
Black Pepper 1/2 teaspoon
Cheddar Cheese (shredded) 1 cup
Beef Broth 1/2 cup

Instructions:

  1. Preheat oven and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Brown the beef and onions: In a large skillet, brown the ground beef with the chopped onion over medium heat until the meat is no longer pink and the onion is tender.
  3. Drain and season: Drain any excess fat from the skillet. Stir in the garlic powder, salt, and pepper.
  4. Layer the casserole:
    • Layer half of the chopped cabbage into the prepared baking dish.
    • Spoon the browned ground beef and onion mixture evenly over the cabbage.
    • Sprinkle the cooked rice over the beef mixture.
    • Pour the diced tomatoes, along with their juice, over the rice.
    • Add the remaining chopped cabbage on top.
  5. Add beef broth: Gently pour the beef broth over the entire dish.
  6. Bake covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 minutes.
  7. Add cheese and bake uncovered: Remove the aluminum foil and sprinkle the shredded cheddar cheese evenly over the top of the casserole. Bake uncovered for another 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden brown.
  8. Cool slightly and serve: Let the casserole cool for a few minutes before serving.
