This crustless quiche is a delicious and low-carb option that’s packed with flavor. The combination of spinach, mushrooms, and feta cheese creates a savory and satisfying dish.

Ingredients:

Olive oil 1 tablespoon
Onion, finely chopped 1 small
Fresh spinach, chopped 2 cups
Mushrooms, sliced 1 cup
Eggs 4 large
Heavy cream 1 cup
Crumbled feta cheese 1/2 cup
Salt and pepper To taste
Garlic powder 1/2 teaspoon
Nutmeg 1/4 teaspoon

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the sliced mushrooms to the skillet and cook until they’re tender and the moisture has evaporated, about 7-10 minutes.
  4. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.
  5. In a large mixing bowl, whisk together the eggs, heavy cream, garlic powder, nutmeg, salt, and pepper until well combined.
