I was this close to giving up on cooking beef roasts—until I found this trick.

This Envelope Roast is an incredibly simple yet supremely flavorful way to achieve a tender, juicy chuck roast with minimal effort. By combining three dry seasoning mixes with water, you create a rich, savory gravy that infuses the meat as it slow cooks, making for a truly delicious and hands-off meal.

Envelope Roast

Ingredients:

Ingredient Quantity
Chuck Roast 3 lb
Dry Italian Seasoning Mix (packet) 1
Dry Ranch Seasoning Mix (packet) 1
Dry Brown Gravy Mix (packet) 1
Water 1 cup
Salt To taste
Pepper To taste
Optional Additions:
Ingredient Quantity
Baby potatoes As desired
Whole baby carrots As desired
Chopped onions As desired

Instructions:

  1. Prepare Roast: Season the 3 lb chuck roast generously with salt and pepper on all sides.
  2. Place in Crockpot: Carefully place the seasoned roast into your slow cooker (crockpot).
  3. Prepare Sauce: In a small bowl, combine the contents of the 1 package Dry Italian Seasoning Mix, 1 package Dry Ranch Seasoning Mix, and 1 package Dry Brown Gravy Mix.
  4. Add Water & Whisk: Pour in 1 cup of water into the bowl with the dry mixes. Use a whisk to mix all of the ingredients together thoroughly until smooth and well combined.
  5. Pour Over Roast: Pour the prepared sauce mixture evenly over the top of the chuck roast in the crockpot.
  6. Optional Vegetables: If desired, add baby potatoes, whole baby carrots, and/or chopped onions around the roast in the crockpot.
  7. Cook: Set the crockpot on high and cook for 4 hours. Throughout the cooking process, continue to baste the roast periodically with the seasonings and juices that accumulate in the bottom of the pot.
  8. Check Doneness & Serve: After 4 hours, the roast should be very tender and easily shreddable. If you added vegetables, check to make sure they are fully cooked and tender before serving.

This “Envelope Roast” is fantastic served with mashed potatoes, rice, or simply on its own with the rich gravy.
