Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with cooking spray or butter.
  2. Prepare the Meatloaf: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, salt, black pepper, and Italian seasoning. Mix until just combined. Transfer the meat mixture to the prepared loaf pan, pressing it evenly into the pan. Spread an additional 2 tablespoons of ketchup over the top of the meatloaf.
  3. Bake the Meatloaf: Bake the meatloaf in the preheated oven for 50-55 minutes, or until the internal temperature reaches 160°F (71°C). Remove from the oven and let it rest for 10 minutes before proceeding.
  4. Prepare the Mashed Potatoes: While the meatloaf is baking, place the potato chunks in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot. Add the milk, butter, sour cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning as needed.
