This recipe brings the flavors of Spain straight to your kitchen with juicy shrimp cooked in a fragrant garlic-infused olive oil.

Large shrimp, peeled (shells reserved) | 1 pound |

Red pepper flakes (optional) | Pinch OR 1-inch dried guajillo chile |
Sherry vinegar | 1 ½ teaspoons |
Fresh parsley leaves, chopped | 2 tablespoons |
Instructions:

Prep the Garlic & Shrimp:
- Finely mince 4 garlic cloves.
- Smash 4 cloves with the flat side of a knife.
- Thinly slice the remaining 4 cloves.
- In a large bowl, combine the minced garlic, peeled shrimp, 3 tablespoons olive oil, ¾ teaspoon salt, and baking soda. Toss and let marinate at room temperature.

Flavor the Oil:
- In a large skillet, heat the remaining olive oil and shrimp shells (with smashed garlic) over medium-low heat. Add red pepper flakes (or guajillo chile) if using.
- Cook for 10 minutes, stirring occasionally, until the shells turn deep red, the garlic is golden brown, and the oil is fragrant. The oil should simmer gently.
- Strain the oil through a fine-mesh sieve into a bowl, pressing the shells to release as much flavor as possible. Discard the shells and garlic.

Cook the Shrimp:
- Increase the heat to medium-high and heat the flavored oil until shimmering.
- Add the sliced garlic and cook for 1 minute, stirring constantly, until golden brown.
- Add the marinated shrimp and cook for 2 minutes, tossing constantly, until just cooked through.
- Stir in the sherry vinegar and parsley. Season with additional salt to taste.
