Roasted Parmesan Creamed Onions

Ingredients:

Ingredient Quantity
Large Sweet Onions 4
Extra virgin Olive Oil 3 tbsp
Heavy cream 1 cup
White wine ¼ cup
Grated Parmesan Cheese ¼ cup
Salt To taste
Pepper To taste

Instructions:

  1. Preheat Oven & Prep Onions: Preheat your oven to 375°F (190°C). Carefully place the sweet onions, peeled and sliced ½ inch thick (keeping the rings intact), into a parchment-lined baking dish.
  2. Season & Roast Onions (Initial): Drizzle the sliced onions with the extra virgin olive oil and season generously with salt and pepper to taste. Place the dish in the preheated oven and roast for about 20-25 minutes, or until they begin to soften.
  3. Prepare Cream Sauce: While the onions are roasting, place the heavy cream and white wine into a saucepan on the stove over medium heat. Heat until the cream begins to simmer gently around the edges. Once it simmers, remove from the heat and set aside.
  4. Combine & Continue Baking:
    • Remove the partially roasted onions from the oven. If they were in a flat pan, carefully transfer them to a baking dish (like an 8×8 or 9×13, depending on how many onions) while continuing to keep the rings intact and together.
    • Slowly pour the prepared cream mixture evenly over the onions.
    • Sprinkle with the grated Parmesan cheese.
    • Cover the baking dish tightly with aluminum foil and return to the oven.
  5. Finish Roasting: Bake for another 20 minutes covered. Then, carefully remove the foil and roast for an additional 5 minutes, or until the onions have begun to brown slightly and caramelize, and the sauce is bubbly.
