Cheesy Hamburger Potato Casserole

Ingredients:

Ground beef, crumbled 1 lb
Potatoes, peeled and sliced 3/4 lbs
Cheddar cheese, shredded 8 oz (or more)
Cheddar cheese soup mix 1 can
Evaporated milk (or whole milk) 12 oz
Milk 1/2 cup
Yellow onion, diced 1
Salt 1 teaspoon
Black pepper 1/2 teaspoon

How To Make Cheesy Hamburger Potato Casserole:

Step 1: Prep the Oven and Meat: Preheat your oven to 350°F. Lightly spray a 9×13-inch baking dish with non-stick cooking spray. In a large skillet, cook the 1 lb of ground beef and the diced onion over medium-high heat until the meat is fully browned and the onions are soft. Drain any excess grease.

Step 2: Slice the Potatoes: Peel the 3/4 lbs of potatoes and slice them into rounds approximately 1/4-inch thick. Keeping the slices uniform will help the casserole cook evenly.

Step 3: Layer the Casserole

  • First Layer: Place a layer of potatoes in the bottom of the pan and sprinkle with a bit of salt and pepper. Top with 1/3 of the beef/onion mixture and 1/3 of the shredded cheese.

  • Repeat: Repeat this process two more times until you have three distinct layers. Your final top layer should be the remaining shredded cheese.

Step 4: Whisk the Sauce: In a mixing bowl, whisk together the 1 can of cheddar cheese soup mix, the 12 oz of evaporated milk, and the 1/2 cup of regular milk. Pour this creamy mixture slowly and evenly over the top of the potatoes and beef.

Step 5: Bake: Cover the dish tightly with aluminum foil to trap the steam (this is what softens the potatoes). Bake for 1 hour.

Step 6: Crisp and Finish: Remove the foil and bake for an additional 15 minutes. This allows the cheese on top to get bubbly and golden brown. If your potato slices were thicker than 1/4 inch, you may need to add an extra 10/15 minutes to the total bake time.

If you want to add a bit of color and a fresh bite to the dish, sprinkle some chopped green onions or fresh parsley over the top right after it comes out of the oven!
