How To Make Cheesy Hamburger Potato Casserole:
Step 1: Prep the Oven and Meat: Preheat your oven to 350°F. Lightly spray a 9×13-inch baking dish with non-stick cooking spray. In a large skillet, cook the 1 lb of ground beef and the diced onion over medium-high heat until the meat is fully browned and the onions are soft. Drain any excess grease.

Step 2: Slice the Potatoes: Peel the 3/4 lbs of potatoes and slice them into rounds approximately 1/4-inch thick. Keeping the slices uniform will help the casserole cook evenly.

First Layer: Place a layer of potatoes in the bottom of the pan and sprinkle with a bit of salt and pepper. Top with 1/3 of the beef/onion mixture and 1/3 of the shredded cheese.

Repeat: Repeat this process two more times until you have three distinct layers. Your final top layer should be the remaining shredded cheese.
Step 4: Whisk the Sauce: In a mixing bowl, whisk together the 1 can of cheddar cheese soup mix, the 12 oz of evaporated milk, and the 1/2 cup of regular milk. Pour this creamy mixture slowly and evenly over the top of the potatoes and beef.
Step 5: Bake: Cover the dish tightly with aluminum foil to trap the steam (this is what softens the potatoes). Bake for 1 hour.
Step 6: Crisp and Finish: Remove the foil and bake for an additional 15 minutes. This allows the cheese on top to get bubbly and golden brown. If your potato slices were thicker than 1/4 inch, you may need to add an extra 10/15 minutes to the total bake time.
