These roasted Parmesan creamed onions are a delightful and comforting side dish. The sweet caramelization of the roasted onions combined with the rich and creamy sauce makes for an irresistible flavor combination.

Ingredients:

Ingredient Quantity
Large sweet onions, peeled and sliced ½ inch thick 4
Extra virgin olive oil 3 tbsp
Heavy cream 1 cup
White wine ¼ cup
Grated Parmesan cheese ¼ cup
Salt and pepper To taste

Instructions:

  1. Prepare the onions: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Peel onions and slice into ½-inch thick rings. Place on prepared baking sheet, drizzle with olive oil, and season with salt and pepper.
  2. Roast the onions: Place baking sheet in preheated oven and roast for 25-30 minutes, or until golden brown and caramelized. Turn onions halfway through cooking time.
  3. Prepare the cream sauce: In a medium saucepan, combine heavy cream and white wine. Bring to a simmer over medium heat. Add Parmesan cheese and stir until melted and sauce is thickened. Season with salt and pepper.
  4. Combine and bake: Remove roasted onions from oven and transfer to a baking dish. Pour Parmesan cream sauce over onions. Return dish to oven and bake for 10-15 minutes, or until sauce is bubbly and slightly golden.
  5. Serve: Remove dish from oven and let cool slightly before serving. Enjoy as a side dish with your favorite main course.
