Ingredients:

Ingredient Quantity
Mixed Fruits 5-6 cups (cherries, apricots, raisins, cranberries)
Chocolate Milk 2 cups
Bailey’s Irish Cream 1/2 cup
Self-Rising Flour 2 cups

Instructions:

  1. In a large bowl, combine the mixed fruit, chocolate milk, and Bailey’s. Let this mixture soak for at least 24 hours, allowing the fruit to plump up and absorb the flavors.

  2. Line your slow cooker with parchment paper, making sure to cover both the bottom and sides for easy removal later.

  3. After the fruit has soaked, stir in the self-rising flour until just combined. Be careful not to overmix.

  4. Pour the batter into your prepared slow cooker.

  5. Cover the slow cooker and cook on low for 6-7 hours. The cake is done when a toothpick inserted into the center comes out clean.

  6. Once cooked, carefully use a knife to loosen the edges of the cake from the slow cooker. You can then flip the cake over onto a plate for easier serving.

  7. Let the cake cool completely before slicing and serving. Enjoy your delicious slow cooker fruit cake!
