Stuffed Bell Peppers

Ingredients:

Green Peppers 6 medium
Ground Beef 1 lb
Onion 1 (chopped)
Rice-A-Roni (Spanish Flavor) 1 (6 7/8 ounce) box
Tomato Sauce 1 (16 ounce) can
Sugar 1 teaspoon
Diced Tomatoes (for use in making the rice) 1 (14 1/2 ounce) can
Cheddar Cheese (shredded) or American Cheese 1 cup

Instructions:

  1. Prepare Peppers: Remove the tops and seeds from the green peppers. Parboil the peppers in boiling water for 5 minutes, then drain.

  2. Cook Beef and Onion: Combine the ground beef and chopped onion in a skillet. Cook over medium heat until the beef is browned and the onion is softened. Drain any excess grease.

  3. Prepare Rice: Prepare the Rice-A-Roni according to the package directions, using the diced tomatoes instead of water.

  4. Combine Rice and Beef: Once the rice is cooked, combine it with the cooked beef and onion.

  5. Fill Peppers: Stuff the peppers evenly with the rice and beef mixture.

  6. Add Sauce: Pour the tomato sauce (mixed with 1 teaspoon of sugar) around the peppers in the baking dish. Do not pour sauce over the peppers.

  7. Bake: Cover the baking dish and bake at 350°F (175°C) for 35 minutes.

  8. Add Cheese: Uncover the baking dish and top each pepper with shredded cheese.

  9. Melt Cheese: Bake uncovered for an additional 5 minutes, or until the cheese is melted and bubbly.

  10. Serve: Serve the stuffed peppers hot, with the remaining tomato sauce on the side.
