Ingredients:

Ranch Style beans 1 can
Tortilla chips, crushed 1 10-12 ounce bag
Ro-tel tomatoes 1 can
Onion, chopped 1 small
Shredded cheddar cheese 2 cups, divided
Taco seasoning 1 package
Cream of chicken soup 1 can
Water 1/2 cup

Instructions:

  1. Preheat Oven: Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).
  2. Brown Ground Beef: In a large skillet, brown the lean ground beef over medium heat until fully cooked. Once cooked, drain off any excess fat.
  3. Mix Ingredients: To the cooked ground beef, add the Ranch Style beans (undrained), Ro-tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water. Stir well to combine all the ingredients thoroughly.
  4. Simmer Mixture: Allow the mixture to simmer over medium-low heat for about 5-7 minutes, stirring occasionally, until everything is well combined and heated through.
  5. Prepare Casserole Dish: Grease a 9×13 inch (23×33 cm) casserole dish to prevent sticking.
  6. Layer Ingredients: Start by creating a layer of crushed tortilla chips at the bottom of the greased casserole dish. Next, spoon half of the meat and bean mixture over the chips, spreading it out evenly. Sprinkle half of the shredded cheddar cheese over the meat mixture.
  7. Repeat Layers: Repeat the layering process by adding another layer of crushed tortilla chips, followed by the remaining meat and bean mixture, and finally, the remaining shredded cheddar cheese.
  8. Cover and Bake: Cover the casserole dish with foil and place it in the preheated oven. Bake for 20-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted and slightly golden brown on top.
