One Pan Shrimp Fettuccine Alfredo

Ingredients

  • 3 tablespoons unsalted butter, divided
  • 16 ounces large shrimp, peeled, deveined, and tails removed
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 cups chicken broth
  • 1 cup milk
  • 8 ounces fettuccine noodles, dry
  • 1 cup parmesan cheese, grated
  • ½ cup heavy cream
  • Pinch of nutmeg
  • Parsley, chopped, for garnish

Instructions

  1. In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add shrimp and garlic and season with salt and pepper. Cook, stirring occasionally, until shrimp are pink and cooked through, about 5 minutes. Transfer to a plate and keep warm.
  2. In the same skillet, melt the remaining butter over medium heat. Add chicken broth and milk and bring to a boil. Add fettuccine noodles and cook, stirring frequently, until al dente and most of the liquid is absorbed, about 15 minutes.
  3. Stir in parmesan cheese and heavy cream and cook until cheese is melted and sauce is smooth, about 2 minutes. Season with salt, pepper and nutmeg to taste.
  4. Return shrimp to the skillet and toss to coat with the sauce. Sprinkle with parsley and serve hot.
