Ingredients:

Ingredient Quantity
All-Purpose Flour 3 cups
Baking Soda 1 teaspoon
Baking Powder 1 tablespoon
Granulated Sugar 1 tablespoon
Salt 1 1/2 teaspoons
Buttermilk 2 cups
Large Egg 1
Garlic (minced) 3 cloves
Olive Oil ⅓ cup
Fresh Oregano (chopped) 1 tablespoon
Fresh Chives (chopped) 1 tablespoon
Fresh Thyme (chopped) 1 tablespoon
Fresh Rosemary (chopped) 1 tablespoon
Olive Oil (for top) 1 tablespoon
Shredded Parmesan Cheese ¼ cup

Instructions:

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Thoroughly grease a 9×5-inch loaf pan with butter or cooking spray.
  2. Sift dry ingredients: In a large bowl, sift together the all-purpose flour, baking soda, baking powder, granulated sugar, and salt. This ensures even distribution of the leavening agents.
  3. Combine wet ingredients: In another large bowl, combine the buttermilk, large egg, and minced garlic. Whisk until the mixture is smooth and well combined.
  4. Combine wet and dry ingredients: Slowly pour the wet buttermilk mixture into the dry flour mixture, mixing gently until just combined. Do not overmix, as this can result in a tough bread.
  5. Add olive oil and herbs: Add the ⅓ cup olive oil, chopped fresh oregano, chopped fresh chives, chopped fresh thyme, and chopped fresh rosemary to the batter. Stir until the herbs are evenly distributed throughout the dough.
  6. Pour batter into pan: Pour the prepared batter into the greased 9×5-inch loaf pan, spreading it out evenly.
  7. Top with olive oil and Parmesan: Drizzle 1 tablespoon of olive oil evenly over the top of the batter. Sprinkle the shredded Parmesan cheese over the olive oil.
  8. Bake: Bake in the preheated oven for 42-45 minutes, or until the bread is set in the middle and the top is golden brown. A toothpick inserted into the center of the bread should come out clean.
  9. Cool: Remove the Herb & Cheese Quick Bread from the oven and let it cool in the pan for 25 minutes before slicing. This allows the bread to set slightly and makes it easier to slice.
  10. Slice and serve: After cooling, slice the bread and serve warm or at room temperature. Enjoy this savory and aromatic loaf!
