Sausage Hashbrown Casserole: A Hearty Breakfast or Brunch Bake

Ingredients:

Ingredient Quantity
Frozen hash browns 2 pounds
Ground sausage, cooked thoroughly 2 pounds
Cheddar Cheese, shredded 2 cups
Milk 2 cups
Large eggs, whisked 9
Garlic powder 1 tsp
Onion powder ½ tsp
Small can diced green chilis 1
Salt and pepper To taste

Instructions:

  1. Preheat Oven & Cook Sausage: Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, cook the ground sausage, breaking it apart with a spoon until it’s completely browned and cooked through. Remove the cooked sausage from the pan and set it aside, leaving any rendered fat.
  2. Brown Hash Browns: Add a couple of drops of oil to the same skillet if needed. Add the frozen hash browns and cook them over medium heat, stirring occasionally, until they are lightly browned. This step adds a nice texture to the casserole.
  3. Assemble Layers: Grease a 9×13-inch baking pan. Spread the lightly cooked hash browns in an even layer across the bottom of the pan. Evenly spread the cooked sausage on top of the hash browns. Sprinkle shredded Cheddar cheese over the sausage layer, then sprinkle the diced green chilis on top of the cheese.
  4. Prepare Egg Mixture: In a large bowl, combine the whisked eggs, milk, garlic powder, onion powder, and salt and pepper to taste. Whisk until all ingredients are well combined.
  5. Bake Casserole: Pour the egg mixture evenly over the top of the sausage, hash browns, and cheese in the baking pan. Bake uncovered for 35 to 45 minutes, or until the eggs are completely set and the casserole is golden brown and bubbly.
