Ingredients:

Ingredient Quantity
Whole wheat flour 2 cups
Oats 1 cup
Dried yeast 1 tablespoon
Salt 1 teaspoon
Honey or maple syrup 2 tablespoons
Olive oil 1 tablespoon
Warm water 1 1/4 cups

Instructions:

  1. Activate the yeast: In a small bowl, combine yeast, 1 teaspoon of honey or maple syrup, and warm water. Let it sit for 5-10 minutes, or until it becomes bubbly.
  2. Combine dry ingredients: In a large bowl, whisk together whole wheat flour, oats, and salt.
  3. Mix wet and dry ingredients: Add the activated yeast mixture, remaining honey or maple syrup, and olive oil to the dry ingredients. Mix until a dough forms.
  4. Knead the dough: Transfer the dough to a floured surface and knead for 10 minutes, or until smooth and elastic.
  5. First rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
  6. Shape and second rise: Punch down the dough and shape it into a loaf. Place it in a greased loaf pan and let it rise for another 30 minutes.
  7. Bake: Preheat oven to 375°F (190°C). Bake the bread for 30-35 minutes, or until golden brown and sounds hollow when tapped.
  8. Cool and serve: Let the bread cool completely before slicing and serving.
