Ingredients:

Instructions:
Prepare Caramel:

- In a heavy-bottomed saucepan, heat 75 g of sugar over medium heat until it melts and turns a deep amber color. Stir constantly.
- Quickly pour caramel into individual pudding molds or ramekins.
Make Pudding Mixture:

- In a large saucepan, heat 750 ml of milk over medium heat until steaming, but not boiling.
- In a separate bowl, whisk together egg yolks and remaining 60 g of sugar until pale and thickened.
- Dissolve cornstarch in 20 ml of milk.
- Gradually pour warm milk into egg yolk mixture, whisking constantly.
- Add cornstarch mixture and cinnamon powder to saucepan. Cook over medium heat, stirring constantly, until thickened (5-7 minutes).
- Remove from heat and stir in vanilla extract.
Assemble and Chill:
- Pour pudding mixture into caramel-coated molds.
- Cover molds with plastic wrap and refrigerate for at least 4 hours, or until set.
Serve:
- Unmold pudding onto a plate.
- Garnish with cinnamon, whipped cream, or fresh berries (optional).
