These golden-brown corn fritters are a delightful appetizer or side dish. Crispy on the outside and tender on the inside, they’re a perfect way to enjoy fresh corn.

Ingredients:

Ingredient Quantity
Fresh corn kernels 2 large ears
Scallions, finely chopped 4 medium
Flour 6 tablespoons
Egg, whisked 1 large
Heavy cream 2 tablespoons
Salt 1/2 teaspoon
Vegetable oil 1/2 cup

Instructions:

  1. Prepare the Corn:

    • Cut kernels off the corn cobs.
  2. Make the Batter:

    • Combine corn kernels, scallions, flour, and salt in a bowl.
    • Whisk together egg and heavy cream.
    • Add wet ingredients to dry ingredients and mix until combined.
  3. Fry the Fritters:

    • Heat oil in a skillet over medium-high heat.
    • Drop batter by spoonfuls into hot oil, frying in batches.
