- Prepare Cake & Pudding: Cut the prepared angel food cake into bite-sized cubes and set them aside. In a medium bowl, whisk together the 1 package of instant cheesecake pudding mix, 1 ½ cups milk, 1 cup sour cream, and 1 teaspoon vanilla extract until smooth. Set this mixture aside.
- Assemble the First Layer: In a 13×9-inch baking dish, place half of the cake cubes in an even layer on the bottom of the pan. Spoon half of the cherry pie filling over the cake cubes.
- Assemble the Second Layer & Pudding: Repeat the cake layer with the remaining cake cubes. Pour the cheesecake pudding mixture over the top of the cake, spreading it evenly to cover the layer. Spoon the 1 container of cold whipped topping over the pudding layer and spread it out. Place the remaining cherry pie filling on top of the whipped topping.
- Chill & Serve: Place the cake in the refrigerator to chill for at least 4 hours, or until it is set and the flavors have melded together. Just before serving, sprinkle the optional 1 tablespoon of roasted almond slices on top.
