How to Make Hashbrown Casserole:
- Step 1: Prep & Sauté: Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole baking dish. In a medium pot, heat the olive oil over medium heat on the stovetop. Add the diced onion and sauté until it begins to brown. Add the minced garlic and sauté until fragrant, about 1 minute.
- Step 2: Make the Sauce Base: Sprinkle the flour over the onions and stir well. Cook for a few seconds, then slowly pour in the chicken stock while stirring to create a smooth mixture. Next, slowly pour in the milk while continuing to stir.
- Step 3: Finish the Sauce: Let the mixture heat through and begin to thicken. Stir in the sour cream, 1 cup of cheese, salt, and pepper. Let the sauce cook and thicken as the cheese melts. Taste and adjust seasoning as needed. Stir in the minced parsley.
- Step 4: Combine & Bake: In a large bowl, mix the thawed hash browns and the prepared cheese sauce until well combined. Spread the mixture evenly in the prepared casserole dish. Sprinkle the remaining 1 cup of cheese over the top. Bake for 35-40 minutes, until the casserole is browned and bubbling around the edges.
