This Pecan Pie Cobbler offers the best of both worlds: the rich, gooey, nutty bottom layer of pecan pie combined with a tender, cake-like topping, all baked into a comforting cobbler. It’s an incredibly satisfying dessert that’s easy to make and perfect for any occasion.

Pecan Pie Cobbler

Ingredients:

Ingredient Quantity
Unsalted butter 6 tablespoons
Pecans, roughly chopped 1 1/2 cups
Self-rising flour 1 1/2 cups
Sugar (granulated) 1 1/2 cups
Whole milk 2/3 cup
Vanilla extract 1 teaspoon
Brown sugar, packed 1 1/2 cups
Hot water 1 1/2 cups

Instructions:

  1. Preheat Oven & Melt Butter: Preheat your oven to 350°F (175°C). Place the 6 tablespoons of unsalted butter into a 9×13-inch baking dish. Place the baking dish in the preheated oven just long enough for the butter to melt completely.
  2. Add Pecans: Once the butter is melted, carefully remove the baking dish from the oven. Sprinkle the 1 1/2 cups of roughly chopped pecans evenly over the melted butter. Set the baking dish aside.
  3. Make Batter: In a large bowl, whisk together the self-rising flour, 1 1/2 cups of granulated sugar, whole milk, and vanilla extract until the mixture comes together into a smooth batter.
  4. Layer Batter: Carefully pour the prepared batter over the pecans and melted butter in the baking dish. Gently spread the batter into an even layer, being careful not to mix the pecans into the batter once the batter is poured.
  5. Add Sugars & Water: Evenly sprinkle the 1 1/2 cups of packed brown sugar in an even layer on top of the cake batter (again, without mixing it in). Then, very carefully pour the 1 1/2 cups of hot water on top of the brown sugar layer.
  6. Bake: Place the baking dish in the oven and bake for 30-35 minutes, or until the cake portion is golden brown and a toothpick inserted comes out clean.
  7. Cool & Serve: Remove the cobbler from the oven and let it cool for at least 15 minutes before serving. This allows the gooey pecan layer to set properly.
