Ingredients: Quantity
Sugar 1 ½ cups
All-purpose flour 2 cups
Baking soda 1 teaspoon
Salt ½ teaspoon
Large eggs 2
Crushed pineapples, with juice 1 (20 oz) can
Brown sugar 1 cup
Pecans, chopped 1 cup

For the Icing:

Ingredients: Quantity
Evaporated milk 1 cup
Sugar ½ cup
Unsalted butter ½ cup (1 stick)
Vanilla extract 1 teaspoon

How to Make Granny Cake:

  1. Prep Oven & Batter: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. In a large bowl, whisk together the sugar, flour, baking soda, and salt. Then, mix in the eggs and the crushed pineapples with their juice until just combined.
  2. Bake the Cake: Pour the batter into the prepared pan. Evenly sprinkle the 1 cup of chopped pecans and 1 cup of brown sugar over the top of the batter. Place the baking dish in the oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  3. Make the Icing: While the cake is baking, combine the evaporated milk, ½ cup of sugar, and ½ cup of butter in a medium saucepan over medium-high heat. Bring the mixture to a boil, stirring occasionally.
  4. Pour and Serve: Remove the saucepan from the heat and stir in the 1 teaspoon of vanilla extract. Immediately pour the hot icing evenly over the hot cake. Let the cake cool in the pan for a while so it fully absorbs the icing. Slice, serve, and enjoy!

This cake is best served warm and gooey, but it’s also delicious once fully cooled.
