- Cook the Rice: Add the 2 cups of water to a small pot and bring to a boil. Stir in the 1 cup of uncooked rice and reduce the heat to low. Cover the pot and simmer for 20 minutes.
- Whip the Cream: While the rice is cooking, whip the ¾ cup of chilled heavy whipping cream in a separate bowl until stiff peaks form. Set it aside.
- Cool the Rice: Once the rice is fully cooked, uncover the pot and give it a stir. Let it sit for 10 minutes to cool.
- Combine Ingredients: Transfer the cooled rice to a large serving bowl. Mix in the 2 cans of crushed pineapple with juice, 1 ½ cups of mini marshmallows, and ½ cup of granulated sugar until everything is well combined. Gently fold in the whipped cream.
- Chill: Cover the bowl and chill the mixture in the refrigerator for 3-4 hours to allow the flavors to meld and the dessert to set.
- Garnish & Serve: Garnish with maraschino cherries before serving.
