Pastry
½ cup cold water
2 cups all-purpose flour
1 teaspoon salt
½ cup chilled shortening
Apple Filling
2 medium apples, peeled and diced
⅛ teaspoon ground cinnamon
¼ cup white sugar
Oil (for frying)

  1. Prepare the pastry
    • Sift together flour and salt.
    • Cut in the chilled shortening with a pastry blender until the mixture resembles coarse crumbs.
    • Add cold water, 1 tablespoon at a time, mixing gently with a fork until dough comes together.
    • Shape into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
  2. Make the filling
    • Place diced apples in a saucepan.
    • Add cinnamon and sugar, tossing to coat.
    • Cover and cook over low heat until apples are soft.
    • Mash with a fork into a thick applesauce. Let cool.
  3. Shape the pies
    • Lightly flour your work surface. Roll out the chilled dough.
    • Cut into rounds about 4 inches in diameter using a large cookie cutter.
    • Moisten edges with cold water. Place 1 tablespoon of filling in the center of each round.
    • Fold in half and press edges with a fork to seal. Repeat with remaining dough.
  4. Fry the pies
    • Heat oil in a large saucepan to 190°C (375°F).
