Loaded Taco Beef Casserole

Ingredients:

Ingredient Quantity
Ground Beef 1 pound
Taco Seasoning 1 packet
Salsa 1 cup
Black Beans 1 (15-ounce) can, drained and rinsed
Frozen Corn 1 cup
Tortilla Chips 2 cups, crushed
Cheddar Cheese 2 cups, shredded
Black Olives 1/2 cup, sliced
Green Onions 1/4 cup, chopped
Cilantro (optional) 1/4 cup, chopped fresh

Instructions:

  1. Preheat oven: Set your oven to 350°F (175°C).
  2. Cook beef: In a large skillet, cook the ground beef over medium heat until browned. Drain off any excess grease.
  3. Make taco meat: Add the taco seasoning and salsa to the cooked beef, stirring to combine. Simmer for a few minutes until the sauce slightly thickens.
  4. Combine ingredients: In a large mixing bowl, combine the cooked beef mixture with the black beans and corn.
  5. Layer casserole:
    • Spread half of the crushed tortilla chips evenly in the bottom of a 9×13-inch baking dish.
    • Layer the beef mixture over the chips.
    • Sprinkle with half of the shredded cheese.
    • Add the remaining tortilla chips on top.
    • Top with the rest of the shredded cheese.
    • Sprinkle with sliced black olives and chopped green onions.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve: Remove from the oven and let it cool slightly before garnishing with chopped cilantro, if desired.
