Easy Stuffed Pepper Casserole Recipe

Ground beef 1 pound
Bell peppers, chopped 2
Onion, finely chopped 1
Garlic, minced 3 cloves
Worcestershire sauce 1 tablespoon
Low-sodium beef broth 1 (15 oz) can
Diced tomatoes 1 (15 oz) can
Long-grain white rice, uncooked 1 cup
Italian seasoning 1 tablespoon
Salt 1 teaspoon
Black pepper 1/2 teaspoon
Mozzarella cheese, shredded 3/4 cup
Cheddar cheese, shredded 3/4 cup

Instructions:

  1. Cook the beef and vegetables: In a large skillet, brown the ground beef, breaking it up as it cooks. Add the chopped bell peppers and onion, and cook until softened.
  2. Add flavorings: Stir in the minced garlic and cook for a minute or two, until fragrant.
  3. Combine ingredients: Pour in the beef broth, diced tomatoes, uncooked rice, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender.
