Easy French Onion Soup – Don’t LOSE this Recipe

Ingredients:

Ingredient Quantity
Onions (yellow or sweet), thinly sliced 4 large
Unsalted Butter 3 tablespoons
Olive Oil 1 tablespoon
Sugar 1 teaspoon
Salt 1 teaspoon
Beef Broth (or a mix of beef and chicken broth) 4 cups
Dry White Wine (optional) 1 cup
All-purpose Flour 2 tablespoons
Bay Leaf 1
Fresh Thyme 2-3 sprigs (or 1/2 teaspoon dried thyme)
Black Pepper 1/4 teaspoon
Baguette Slices For serving (lightly toasted)
Gruyère Cheese (or Swiss Cheese), grated 1 1/2 cups

Instructions:

  1. Caramelize the Onions:

    • Heat butter and olive oil in a large pot over medium heat.
    • Add the sliced onions, salt, and sugar. Stir to coat.
    • Cook for 25-30 minutes, stirring occasionally, until the onions are golden brown and caramelized. Reduce heat if they start to burn.
  2. Add Flour and Liquids:

    • Sprinkle flour over the onions and cook for 2 minutes, stirring constantly.
    • Pour in the wine (if using) to deglaze the pot, scraping up browned bits.
    • Add the beef broth, bay leaf, thyme, and pepper. Stir well.
  3. Simmer:

    • Bring the soup to a boil, then reduce heat and let it simmer uncovered for 20-30 minutes. Adjust seasoning with salt and pepper if needed. Remove the bay leaf and thyme sprigs.
  4. Prepare the Topping:

    • Preheat your oven broiler.
    • Place toasted baguette slices on a baking sheet and top with grated Gruyère cheese.
  5. Assemble and Broil:

    • Ladle the soup into oven-safe bowls. Place a cheese-covered baguette slice on top of each.
    • Place the bowls on a baking sheet and broil for 2-3 minutes, or until the cheese is melted and golden.
