Easy Classic Southern Potato Salad

This is a classic Southern potato salad recipe that is perfect for picnics, potlucks, or any other occasion. It is made with simple ingredients and is easy to prepare.

Ingredients:

Mayonnaise 1 cup
Dijon mustard ¼ cup
Apple cider vinegar 2 teaspoons
Sugar 2 teaspoons
Sweet pickles, diced ½ cup
Celery, chopped 1 stalk
Vidalia onion, chopped 1 medium
Hard-boiled eggs, chopped 4 large

Instructions:

  1. Prepare the potatoes: Wash the russet potatoes thoroughly and peel if desired. Cut the potatoes into bite-sized cubes and place them in a large pot. Cover with water and bring to a boil over medium-high heat. Reduce heat to simmer and cook until the potatoes are fork-tender, about 10-15 minutes.
