Ingredients:

Ingredients Quantity/Description
Refried beans 1 can (16 ounces)
Whole kernel corn, drained 1 can (14 ounces)
Ground beef 1 ½ pounds, or choice of meat
Taco seasoning mix 1 package
Enchilada sauce 1 can
Green chilis (smaller can) 1 can
Large tortillas 8, your choice, cut in half
Fiesta blend cheese 2 cups, shredded
Green onions Chopped for garnish

Instructions:

  1. Preheat the Oven:
    • Set the oven to 350°F.
  2. Brown the Ground Beef:
    • In a large skillet, brown the ground beef until fully cooked.
  3. Add Taco Seasoning:
    • Sprinkle the taco seasoning over the cooked beef and simmer for a few minutes.
  4. Stir in Sauces and Vegetables:
    • Stir in the enchilada sauce, refried beans, drained corn, and green chilis. Mix well and simmer for a few more minutes until heated through.
  5. Prepare the Baking Pan:
    • Grease the bottom of a 9×13 baking pan.
  6. Layering:
    • Place four cut tortillas to cover the bottom of the pan.
    • Top with half of the meat mixture and half of the shredded cheese.
    • Add another layer of cut tortillas on top of the cheese.
    • Cover with the remaining meat mixture and the rest of the shredded cheese.
  7. Bake:
    • Bake the casserole in the preheated oven for 20 minutes or until golden.
  8. Garnish and Serve:
    • Garnish with chopped green onions.
    • Serve with small dishes of salsa, sour cream, chilis, or any preferred toppings.
