Deep Dish Apple Crisp Recipe

Ingredients:

Apples Enough to cover the bottom of an 8-inch pie plate (approx. 4-6 medium apples), peeled and sliced
TOPPING:
Eggs 2
Granulated sugar 1 cup (reserve ¼ cup for cinnamon sugar)
Cinnamon 1 teaspoon (to mix with ¼ cup reserved sugar)
Melted butter or margarine 2 tablespoons
All-purpose flour 1 cup
Baking powder 1 teaspoon
Vanilla extract 1 teaspoon

Instructions:

  1. Prepare Apples & Dish: Peel and slice enough apples to create an even layer covering the bottom of your 8-inch pie plate.
  2. Prepare Topping Mixture: In a medium bowl, combine all the topping ingredients except for the reserved ¼ cup sugar and 1 teaspoon cinnamon. So, mix together the 2 eggs, ¾ cup granulated sugar (from the 1 cup total), 2 tablespoons melted butter or margarine, 1 cup all-purpose flour, 1 teaspoon baking powder, and 1 teaspoon vanilla extract. Mix until just combined and smooth.
  3. Layer & Bake: In a small separate bowl, mix the reserved ¼ cup sugar with 1 teaspoon cinnamon. Evenly sprinkle this cinnamon sugar mixture over the sliced apples in the pie plate. Carefully pour the prepared topping mixture over the top of the cinnamon-sugar coated apples, spreading it gently to cover them completely. Bake in a preheated 350°F (175°C) oven for 40-45 minutes, or until the topping is firm to the touch and golden brown.
