Creamy Slow Cooker White Chicken Chili

Ingredients:

Boneless, skinless chicken breasts or thighs 2 lbs
Onion, diced 1 small
Garlic, minced 4 cloves
Great northern or cannellini beans, drained and rinsed 2 (15 oz) cans
Diced green chilies 1 (4 oz) can
Ground cumin 2 tsp
Chili powder 1 tsp
Paprika 1 tsp
Dried oregano 1 tsp
Cayenne pepper (optional) 1/2 tsp
Chicken broth (low sodium) 4 cups
Cream cheese, softened 1 (8 oz) package
Heavy cream or half-and-half 1/2 cup
Olive oil 1 tbsp
Lime juice (optional) 1
Salt and black pepper To taste

Instructions:

  1. Sauté onions and garlic: Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened. Add minced garlic and sauté until fragrant. Transfer to slow cooker.
  2. Add chicken and seasonings: Place chicken, beans, diced green chilies, cumin, chili powder, paprika, oregano, cayenne pepper (if using), salt, and pepper in slow cooker. Pour chicken broth over ingredients.
  3. Cook chili: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, or until chicken is cooked through and tender.
  4. Shred chicken: Remove cooked chicken from slow cooker and shred with two forks. Return to slow cooker.
  5. Add cream cheese and cream: Stir in softened cream cheese and heavy cream or half-and-half until cream cheese melts and broth becomes creamy. Cook for another 15-20 minutes on low heat.
  6. Adjust seasoning and serve: Taste chili and adjust seasoning with additional salt, pepper, or lime juice as needed. Ladle into bowls and top with desired toppings.
