Creamy Ranch Potatoes

Step 1: Prep the Potatoes: Scrub your potatoes well and pat them dry. Cut them into evenly sized quarters.

Tip: I highly recommend Yukon Golds for this recipe. Their naturally buttery flavor and “waxy” texture mean they will hold their shape beautifully in the slow cooker rather than falling apart like a starchy Russet might.

Step 2: The Ranch Slurry: In a medium bowl, whisk together the cubed cream cheese, butter, chicken broth, ranch seasoning, chives, and pepper.

Tip: Don’t stress if the mixture looks a bit lumpy! Once the slow cooker heats up, the cream cheese and butter will melt completely into a silky sauce.

Step 3: Combine and Coat: Place the potatoes in the slow cooker and pour the ranch mixture over the top. Use a spatula to make sure as many potatoes as possible are touched by the sauce.

Step 4: Slow Cook: Cover and cook on LOW for 4/5 hours or on HIGH for 2/3 hours.

Tip: Try to keep the lid on! Every time you “peek,” you add about 15/20 minutes to the cooking time because the steam escapes.

Step 5: Toss and Serve: Once the potatoes are fork-tender, gently toss them to ensure they are fully coated in the thickened sauce. Taste for salt before serving—between the ranch mix and the broth, you may find you don’t need any extra!
