Instructions:
- Cream Butter and Sugars: In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the softened unsalted butter and both granulated sugar and packed brown sugar together with an electric mixer until the mixture is light and fluffy, about 3 minutes.
- Add Eggs and Vanilla: Add the room temperature eggs one at a time, beating well after each addition. Then, mix in the vanilla extract until well combined.
- Combine Dry Ingredients: Add the all-purpose flour, salt, baking powder, and baking soda to the wet ingredients. Mix on low speed until just combined. Be careful not to overmix the dough.
- Stir in Mix-ins: Stir in the old-fashioned oats, sliced almonds, and sweetened shredded coconut. Add the white chocolate chips and stir just until they are evenly incorporated throughout the dough.
- Chill Dough: Cover the bowl with plastic wrap and chill the cookie dough in the refrigerator for at least 1 hour or up to 24 hours. This chilling step helps prevent the cookies from spreading too much during baking and allows the flavors to meld.
- Preheat Oven & Prep Baking Sheets: When you are ready to bake, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop and Bake: Scoop out the dough in 1/4 cup portions (a large cookie scoop works well) onto the prepared baking sheets, leaving about 2 inches of space between each scoop to allow for spreading. Bake for 13-15 minutes, or until the edges are golden brown and the centers are just set.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack to cool completely.
