Step 2: Brown the Sausage: In a large skillet over medium heat, cook the 1 lb of breakfast sausage. Break it up with a wooden spoon as it cooks until it is thoroughly browned. Drain off any excess grease before proceeding.

Step 3: Layer the Hash Browns and Meat: Spread the 5 cups of shredded hash browns evenly into the bottom of the baking dish, pressing them down gently. Scatter the cooked sausage across the top of the potatoes in an even layer.
Step 4: Whisk the Egg Mixture: In a medium bowl, whisk together the 6 large eggs and the 2 cups of milk until the mixture is well blended and slightly frothy. (You can add a pinch of salt and pepper here if you’d like).
Step 5: Assemble: Pour the egg and milk mixture carefully over the sausage and potatoes. If necessary, tilt the pan slightly to ensure the liquid settles into all the corners and crevices.
Step 6: Bake: Bake the casserole uncovered for 40–45 minutes. It is done when the center is set (not jiggly), the edges are lightly golden, and a knife inserted into the middle comes out clean.
Step 7: Rest and Serve: Let the casserole rest for 5–10 minutes before slicing. This rest period is crucial as it allows the eggs to firm up, making it much easier to cut into neat squares.
