Hearty Rice and Beef Casserole:

Ingredients:

Ingredient Quantity
Rice-a-Roni (Spanish Rice) 1 box
Ground Beef (lean) 1 pound
Onion (chopped) 1
Bell Peppers (red and green, chopped) 1 each
Shredded Cheddar Cheese 1 cup
Rotel Tomatoes 1 can
Salt and Pepper To taste
Cumin To taste

Instructions:

  1. Prepare Rice-a-Roni: Cook Rice-a-Roni according to package directions.
  2. Brown Beef and Veggies: In a skillet, brown ground beef, chopped onions, and bell peppers.
  3. Combine Ingredients: Add cooked Rice-a-Roni, shredded cheese, Rotel tomatoes, salt, pepper, and cumin to the beef and vegetable mixture. Stir to combine.
  4. Bake: Pour the mixture into a baking dish. Top with additional shredded cheddar cheese. Bake at 350°F for 25-30 minutes, or until heated through and bubbly.
