Instructions:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Set aside.
- In a large bowl or stand mixer, cream together the butter and both sugars until light and fluffy. Beat in the egg and vanilla extract.
- Gradually mix in the dry ingredients until just combined. If desired, chill the dough for 30-40 minutes.
- Scoop the dough into 1-inch balls and place them on ungreased baking sheets, leaving about 2 inches between cookies.
- Bake for 10-11 minutes, or until the edges are lightly browned. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
