Butter Roasted Radishes

These Butter Roasted Radishes transform humble radishes into a tender, subtly sweet, and delightfully savory side dish. Roasting mellows their peppery bite, while butter and spices infuse them with rich flavor, making them a unique and easy addition to any meal.

Ingredients:

Ingredient Quantity
Large radishes 2-3 bunches
Butter, melted ⅓ cup
Salt 1 ½ teaspoons
Black pepper 1 teaspoon
Garlic powder 1 teaspoon
Cayenne pepper Pinch
Cilantro or parsley For garnish

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Radishes: Wash the 2-3 bunches of large radishes thoroughly and discard the greens (save them for another use if you like!). Slice each radish in half from the root to the stem.
  3. Arrange & Butter: Place the sliced radishes flat side down in a 9×13-inch baking dish. Drizzle the ⅓ cup melted butter evenly over the top of the radishes.
  4. Season: Season the radishes generously with 1 ½ teaspoons salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, and a pinch of cayenne pepper. Gently shift the pan around to ensure the radishes are evenly coated with the butter and seasonings.
  5. Roast: Roast in the preheated oven for 20-24 minutes, or until they are slightly browned on the edges and tender when pierced with a fork.
  6. Garnish & Serve: Garnish with fresh cilantro or parsley and serve warm.

These roasted radishes make an excellent low-carb alternative to potatoes or a unique vegetable side.
