Buckeye Brownie Cookies

Buckeye Brownie Cookies are a delightful treat that combines the rich fudgy texture of brownies with the creamy sweetness of peanut butter and the decadent touch of chocolate. These bite-sized delights are perfect for any occasion, from a casual snack to a festive dessert.

Ingredient Quantity
Fudge Brownie Mix (19.5 oz) 1 box
Vanilla Extract 2 teaspoons
Cornstarch 1 teaspoon
Butter, Melted 1/4 cup
Cream Cheese, Softened 4 ounces
Egg 1
Powdered Sugar 1 cup
Creamy Peanut Butter 1 cup
Semi-Sweet Chocolate Chips 4 ounces

Instructions:

  1. Prepare the Brownie Dough: Preheat oven to 350°F (175°C). In a medium bowl, combine brownie mix, vanilla extract, cornstarch, melted butter, cream cheese, and egg. Mix well using a hand mixer. The dough will be slightly sticky.

  2. Shape and Bake: Scoop the dough onto an ungreased cookie sheet, forming round cookies. Smooth the edges of each cookie. Bake for 12 minutes.

  3. Prepare the Peanut Butter Filling: While the cookies bake, combine powdered sugar and peanut butter in a medium bowl. Mix well to form a smooth paste. Roll the mixture into 1-inch balls, creating one ball for each cookie.

  4. Assemble the Cookies: As soon as the cookies come out of the oven, gently press a peanut butter ball into the center of each cookie. The peanut butter will slightly soften.

  5. Cool and Top: Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

  6. Add Chocolate: Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval, until smooth. Spoon about 1/2 tablespoon of melted chocolate over each peanut butter ball, covering it completely.

  7. Store: Allow the chocolate to set completely. Store the Buckeye Brownie Cookies in an airtight container at room temperature.
