Sweet Amish Macaroni Salad

Ingredients:

Uncooked elbow macaroni 2 cups
Large eggs, hard-boiled 3
Celery, chopped 3 sticks
Onion, chopped or diced 1
Sweet pickle relish 2 tablespoons
Yellow mustard 3 tablespoons
Small red bell pepper, stemmed, seeded, and chopped 1
Miracle Whip salad dressing 2 cups
White sugar ¾ cup
White vinegar 2 ¼ teaspoons
Celery seed ½ teaspoon
Salt To taste
Pepper To taste

Instructions:

  1. Cook Macaroni: Cook the elbow macaroni according to the package directions until al dente. Drain thoroughly and rinse with cold water to cool it down and prevent sticking. Set aside.
  2. Combine Vegetables & Eggs: In a large mixing bowl, combine the hard-boiled eggs (chopped or diced), sweet pickle relish, chopped red bell pepper, and chopped or diced onion.
  3. Prepare Dressing: In a separate small bowl, stir together the Miracle Whip salad dressing, yellow mustard, white vinegar, white sugar, and celery seed. Whisk until the sugar is dissolved and the dressing is smooth. Season with salt and pepper to taste.
  4. Combine All Ingredients: Pour the prepared dressing mixture over the vegetables and eggs in the large bowl. Add the cooked and cooled macaroni to the bowl. Stir everything together gently until all ingredients are well combined and evenly coated with the dressing.
