Laura Bush’s Cowboy Cookies

Ingredients:

Baking powder 1 tablespoon
Baking soda 1 tablespoon
Ground cinnamon 1 tablespoon
Salt 1 teaspoon
Butter, room temperature 1 1/2 cups (3 sticks)
Granulated sugar 1 1/2 cups
Light-brown sugar, packed 1 1/2 cups
Eggs 3
Vanilla extract 1 tablespoon
Semisweet chocolate chips 3 cups
Old-fashioned rolled oats 3 cups
Sweetened flake coconut 2 cups
Chopped pecans 2 cups

How To Make Laura Bush’s Cowboy Cookies:

  1. Step 1: Preheat and Combine Dry Ingredients: Preheat your oven to 350°F (175°C). In a medium bowl, combine the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Mix well and set aside.
  2. Step 2: Cream Butter and Sugars: In a separate very large bowl, use an electric mixer to beat the butter until creamy. Gradually add the granulated sugar and light-brown sugar, mixing until thoroughly combined.
  3. Step 3: Add Eggs and Vanilla: Add the eggs one at a time, beating after each addition. Mix in the vanilla extract.
  4. Step 4: Combine Wet and Dry: Gradually add the flour mixture to the wet ingredients, beating on low speed until just combined. Do not overmix.
  5. Step 5: Stir in Mix-ins: Stir in the semisweet chocolate chips, old-fashioned rolled oats, sweetened flake coconut, and chopped pecans until evenly distributed throughout the dough.
