All-purpose flour 2 tablespoons
Vegetable oil 2 tablespoons
Onion (chopped) 1 large
Garlic (minced) 2 cloves
Beef broth 4 cups
Red wine (optional) 1 cup
Bay leaves 2
Dried thyme 1 teaspoon
Dried rosemary 1 teaspoon
Carrots (peeled and sliced) 4
Potatoes (peeled and diced) 4
Celery stalks (sliced) 2
Frozen peas 1 cup
Salt and black pepper To taste
Chopped fresh parsley (optional) For garnish

Instructions:

  1. Prepare the beef: In a large bowl, combine the beef stew meat and all-purpose flour. Toss to coat the meat evenly with the flour.
  2. Sear the beef: In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat. Add the floured beef chunks in batches and sear them until browned on all sides. Remove the seared beef to a plate and set it aside.
  3. Sauté the aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until fragrant and the onion turns translucent.
  4. Simmer the stew: Return the seared beef to the pot, and pour in the beef broth and red wine (if using). Add the bay leaves, dried thyme, and dried rosemary. Season with salt and pepper to taste. Cover the pot and let the stew simmer over low heat for about 1.5 to 2 hours, or until the beef is tender and the flavors meld together.
  5. Add the vegetables: Stir in the sliced carrots, diced potatoes, and sliced celery. Continue to simmer the stew for an additional 20-30 minutes, or until the vegetables are tender.
  6. Finish and serve: Just before serving, stir in the frozen peas and allow them to heat through. Taste the stew and adjust the seasoning if needed. Garnish with freshly chopped parsley if desired.
