- Step 1: Preheat & Prep Preheat your oven to 375°F (190°C). Grease a 10×15-inch jelly roll pan or rimmed baking sheet.
- Step 2: Make the Crust In a large bowl, whisk together the flour, salt, and granulated sugar. Using a pastry cutter or your fingers, cut in the cold, cubed butter until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough just comes together. Divide the dough into two equal portions, shape each into a disc, wrap in plastic, and chill for at least 30 minutes.
- Step 3: Roll Out the Dough On a lightly floured surface, roll one disc of dough into a large rectangle, slightly larger than your baking pan. Carefully transfer the dough to the prepared pan, pressing it gently into the bottom and up the sides. Roll out the second disc of dough for the top crust and set it aside.
- Step 4: Prepare the Filling In a large bowl, toss the thinly sliced apples with the sugars, flour, cinnamon, nutmeg, vanilla extract, and lemon juice until the apples are evenly coated.
- Step 5: Assemble the Pie Spread the apple filling evenly over the bottom crust in the pan. Top with the second rolled-out dough, trimming any excess and crimping the edges to seal. Cut several slits in the top crust to allow steam to escape during baking. Brush the top with the egg wash and, if desired, sprinkle with coarse sugar for a sparkling finish.
- Step 6: Bake Bake for 45–55 minutes, or until the crust is golden brown and the filling is bubbling. Rotate the pan halfway through the baking time to ensure even browning.
